Zaaf is one of my favourite restaurants in İstanbul. The moment you walk through the door you understand how much chef Aras Çetin loves what he does. The plates give your eyes a feast before your palate gets one. You cannot eat the trüflü ballı çıtır börek they make here anywhere else in the city. The taste of the piyaz on the dry aged rib-eye plate has stayed with me. The little extras that arrive before and after the meal help make it an unforgettable experience. "Pasta Day", which started on Sundays this July, is one of those menus not to be missed by anyone who fancies a day trip through Italian flavours. With the ravioli he makes using the filling from the trüflü ballı çıtır börek and the green olives with negroni he sends out, Chef Aras once again shows what sets him apart.
