More than living up to its name, The Salaş is a place where you can taste unforgettable food in wonderfully rough-and-ready surroundings. The sakatatlı içli köfte, made with sweetbreads, kidney, spleen, liver, heart and minced lamb, is one of the most original things I have eaten to this day. The secret to the flavour of their meat is that they use male kıvırcık lamb under a year old. Only a limited number arrive each day, so I would strongly suggest booking early.
