Siirt Şeref Büryan, one of the places that cooks büryan, among the finest lamb dishes I have eaten, better than anywhere else, is somewhere you really have to visit in İstanbul. Add cotton-soft lamb on top of rich tırnak ekmek and what comes out is a superb plate.
