Real pastrami is a laborious thing that takes days to prepare. The meat is first cured in a particular blend of spices, then smoked and rested, and finally cooked for hours at a low temperature to draw out its characteristic aroma. That is why good pastrami is both hard to find and very much worth valuing. The situation in İstanbul is not much different… And this is exactly where Salamora comes in. They serve a pastrami that stands comparison with the ones I ate in America, tucked into a crisp baguette. Their handmade lemonade goes very well with it.
