I have had the chance to work my way through tasting menus in plenty of places, but Röda Huset was the first time I got to sit down to a cocktail tasting. I have been twice, and both times I chose the tasting menu. The menu is almost a tour of Scandinavia taken from your table, built on local produce such as honey, yoghurt and fruit. By bringing techniques like nitrogen freezing and steeping together with touches of the Far East, they offer an unforgettable experience that is constantly being updated.

Cocktail Tasting Notes

A menu that is very strong in story and in flow. Each cocktail lays the ground for the next.

  • 1/6: Honey martini & apple ice (shaved ice): the balance of sweetness and acidity is very good. The granita texture makes for a refreshing opening.
  • 2/6: Apple juice over hot butter (broth): quite inventive. The richness against the apple aroma is interesting, though it may not be to everyone's taste.
  • 3/6: Nitrogen-frozen yoghurt & aquavit: the star of the night. The texture, the contrast in temperature and the aromatic balance are all perfect.
  • 4/6: Whey & tequila with sugar foam: it follows on from the previous cocktail very well. Light, complex and different.
  • 5/6: Carbonated tea with blackcurrant leaves: fresh and aromatic. The herbal notes lead, and it drinks lightly.
  • 6/6: Cognac, strawberry & cream: a cocktail reading of a classic dessert. Balanced, round and a very fitting close.
