Although Noma now operates only in seasonal stints, its research and development team carries on with its work and with developing new recipes. Noma Projects Shop is a special shop where you can have a partial Noma experience. On my visit here I had the chance both to look through their old recipes and to taste the sauces. The restaurant may not appeal to every palate, but the products in the shop have flavours that can reach a far wider audience.
