New Shanghai opened a new chapter in Asian food for me. Plates made with the finest ingredients offer a complete feast of flavour from start to finish. I can say plainly that they are especially confident when it comes to beef. I tried the Szechuan style in both the dumplings and the main courses and all of it was beyond my expectations. The crispy duck is better than anything you will easily find elsewhere. Together with the wafer-thin steamed pancakes and the hoisin sauce served alongside, it comes together in wonderful harmony.
The tip for eating dumplings comes from Musa Cömertpay: add one measure of soy sauce and three measures of vinegar to your spoon. Set the dumpling on the spoon, open a small hole in it and take it in one go. Enjoy :)
