Şambali, one of İzmir's standout flavours, is a sweet that comes out of a mixture of semolina and yoghurt. The best place to get the measure of it is Meşhur Hisarönü Şambalicisi, which has been going for more than eighty years. If you are going to eat it there and then, I would suggest having it with kaymak and cinnamon.
