Pastel de Nata is one of the first things that comes to mind when you say Portugal. The egg filling sits inside crisp puff pastry and is baked until the top has browned. There are touches of lemon and cinnamon in there too. I did not get the chance to try one in Belém, where this pastry was born, but the best I ate over the course of my trip was at Manteigaria. The outside is crisp, and in the filling the lemon and cinnamon come through clearly.
