Mohamad Orfali and Abhiraj Khatwani have put their signatures to Manao, and it brings genuinely fresh air to Thai cooking. With a tasting menu of thirteen plates they make it very clear that this cuisine is not simply steamed rice and curry. The single-bite dishes served at the start of the meal give you a strong sense of the kitchen's approach from the very first moment. As at the Orfali Brothers' Orfali Bros & Three Bros, fermentation takes on an important role here too. At Manao you see clearly that rice is not just a by-product, and how it can be placed at the centre through different textures, techniques and forms. The breads served alongside, like the roti made from fermented sticky rice and the steamed rice cake, were among the most memorable details of the menu.
