Cooking kavurma, one of the foremost dishes of Turkish cuisine, over a wood fire in a copper cauldron and keeping a century-old tradition alive, Kavurmacı Goze gives your palate a feast alongside a generously buttered pilav. The ayran served with it, made from sheep’s milk with mint and pepper, goes very well next to the food. My thanks to Burak Kan for the recommendation.
