Fauna is, for me, the best pasta restaurant in Istanbul, and it has carried on for years without ever compromising on flavour. Everything they use is of the highest quality, and from time to time seasonal surprises appear on the menu, fresh porcini mushrooms for instance. The beetroot soup is a refreshing way to begin and stands out for its presentation as well. My favourite of the pastas is the black garlic ravioli in porcini sauce. There are also special things here that can be made to order in advance, such as pies and börek. The su böreği with lamb suet in particular is one of the most original things I have eaten to date. To close, the dark chocolate bulaşan, with the texture of a mousse, rounds the experience off perfectly. Thank you to İbrahim Tuna, Emrah Coşkun and the whole Fauna team for such delicious plates.
