The three hours we spent at Fattoria Collebrunacchi were unforgettable from beginning to end. Our tour started with a truffle hunt, and afterwards we had a wonderful lunch made from what nature had handed us. The local wines of the region added to the pleasure. On experiences like this I can carry on filming while still living the moment thanks to the Ray-Ban Meta, which is why those glasses come with me on every trip.

On the Truffle Hunt

  • There are four kinds of truffle: white winter truffle, white spring truffle, black summer truffle and black winter truffle.
  • Truffle hunting is done with pigs and with dogs. Because pigs do more damage as they dig up the soil, hunting truffles with pigs is banned in Italy. Dogs are easier to train and harm the ground less.
  • A dog's training begins while it is still in the womb. Truffle is added to the mother's food, so the puppies grow used to the aroma and taste truffle in her milk once they are born. They keep eating truffle as they grow up.
  • Many breeds of dog can hunt truffles; what matters is that their nose is not too small. We went out with a German Wirehaired Pointer called Cioco.
  • Wind and rain are the things that make a truffle hunt harder, as the dogs pick up scent less easily in that weather and cannot work out where it is coming from.
  • The dogs are very well trained. When they find a truffle under the soil they come back to their owner for a reward biscuit, but if the spot they dug turns out to be empty they carry on hunting without going back.
  • Water and a brush are all you need to clean a truffle.
