Amarena, a small, sour, dark-coloured cherry variety grown around Bologna and Modena, is a special flavour used often in Italian desserts. Fabbri have been making syrups, liqueurs and the like from all sorts of fruit since 1905, and their faintly bitter yet sweet amarena is one you really should try. I find it goes especially well next to the vanilla and pistachio ice cream at Paseo.
