I found the chance, late as it was, to visit the long-standing Çiya Sofrası. On a menu full of regional produce it is possible to find flavours particular to many different parts of Türkiye. The fellah köftesi was every bit as good as the ones I have eaten in Mersin. This is also where I met Aside, one of the standout dishes of Ottoman cuisine. The etli bamya spooned over peppers cooked in milk is a superb flavour.
