Çıtır Lahmacun is, as the name says, the address for properly crisp lahmacun. What makes this lahmacun so crisp is that no yeast is used in the dough. It is not a flavour that will appeal to everyone, but it goes very well with the aubergine purée and black pepper they bring alongside it. Thanks to my brother Kağan Öztürk for the recommendation.
