Chayki, where you can eat with the view of Bakü’nün Gözü in front of you, serves the standout dishes of Azerbaijani cuisine. Natural farming and animal husbandry are still to the fore in Azerbaijan, so you can taste the real flavour of what grows in this soil. The aroma of the tomatoes in particular is remarkably intense. The dish I would urge you to try here is Şah Pilavı. In appearance it recalls our own perde pilavı. Where ours is made with pastry dough on the outside, here yufka is used. Inside there is beef, dried fruit and saffron pilav. I would recommend it to anyone who likes eating sweet and savoury flavours together.
