Çember Restaurant is one of the best stops for şeftali kebabı, one of the first dishes that comes to mind when you think of Cyprus. What makes it distinctive is that the köfte is wrapped in caul fat and cooked that way. It reaches another level of flavour with bitter orange squeezed over it, and eating it inside pita bread with hummus and yoghurt is a pleasure of another kind again.
