Born in New York, Carbone is an Italian-American chain with nine branches across five countries. It is one of the hardest tables to get in the city, and not only within the Bellagio Hotel... The menu covers a great deal of ground, but a little more description of the dishes would have made choosing far easier. We took no risks and went for the signature plates. The pastas are magnificent, and the rigatoni in vodka sauce is one of the standouts. Many of the sauces they use in the kitchen can also be found in shops like Erewhon.
