Calipso is one of the rare fish restaurants to have earned a place in guides such as the Michelin Guide, Gault & Millau and La Liste. I think that success comes from its innovative ideas. As far as I know it was one of the first places to make köfte out of fish. Using wine to prepare mezes is another creative idea of theirs.
