When it comes to turbot in İstanbul, the first address that comes to mind is without any doubt Balıkçı Kahraman. They have been serving with the same care in Rumeli Kavağı since 1996. Grilling a turbot of that size takes real mastery; Kahraman Altun shows what sets him apart by keeping the fish from falling apart and cooking every part of it evenly. I can say with a clear conscience that the best lakerda I have had in a long time is here as well. Tomato salad and cornbread go very well alongside these delicious fish. The cornbread in particular comes in a form more original than any you have seen before, baked wafer-thin and flavoured with leek.
