Astoux et Brun has been serving in the heart of Cannes since 1953 and is one of the city's most established seafood restaurants. Because the menu carries every kind of seafood you could think of, it manages to speak to every palate. My favourite for years has been the salmon tagliatelle, though if I am a little hungrier I add a few shellfish from the Raw Bar section, prawns among them. The desserts are another story altogether, worth going for on their own. The warm tart heavy with apple, and the salted caramel ice cream served beside it, make a perfect finish.
