Paris is home to plenty of three Michelin star restaurants, but Arpège also carries a green star. The plates, built from vegetables picked in chef Alain Passard's own garden, are among the most creative arguments for sustainability I have seen. The beetroot tartare is a taste I will be carrying with me for a long time.
