Araf Istanbul is among the first places that will change the mind of anyone with a prejudice against offal; it offers an enjoyable experience not only through its flavours but through its atmosphere as well. Seating twelve people a day at a U-shaped table facing the open kitchen, it gives you a setting where you can talk to the other guests and to the kitchen team while you eat. Çıtır Beyin was one of the most original plates I ate in 2024.
